Spent a very happy year there in 1965-66 teaching English in boy’s technical school. Learned to cook and to live simply there. We’ve been back twice. Tunisia will always be a special place for me. I like to make Tunisian couscous – savory with lamb, vegetables, including artichoke stems, and with harissa.
